As you all know, I've been baking like crazy lately! It seems like there's always an excuse to bake... It's either for bible study, life group, weekends, or just because I want some chocolate. This whole no sugar thing has been really fun! The times when I have had sugar, it really hasn't tasted all that good. Without using artificial sweeteners and sugar, and substituting honey, coconut, vanilla, etc. Treats are fulfilling and satisfying. I don't mean to sound like an infomercial in this post, but it's true! Every time I have had sugar I get a headache, and keep eating more because I'm not satisfied. Those are just some difference I've noticed since taking sugar out. And, praise the Lord for pinterest! All I have to do is type in "paleo treats", and about a bazillion sugar-free, gluten-free, and dairy-free recipes come up. I don't feel deprived one bit.
Here is one of my favorite recipes I've tried so far.

*1/2 cup nut butter
*1/2 cup honey
*1/2 cup coconut oil
*1/4 cup unsweetened cocoa powder
*2 teaspoons vanilla
In a medium saucepan, melt the the honey, coconut oil, and cocoa powder. Once it starts boiling, let it boil for a minute. Immediately take it off the burner and stir in the nut butter and vanilla. In a muffin tray, evenly divide the mixture. Put in the freezer for 30 minutes, then place in the fridge until you're ready to eat!

Peanut butter and chocolate are my weakness! I will have to try these on my cheat day instead of eating a Reese's.

Yum those look really good. I agree a little vanilla or cinnamon can go a long way. Sipping on my iced coffee "sweetened" with vanilla extract :)

They're great if you leave them in the fridge over night and eat them with homemade paleo ice cream smashed between them!
