These. Are. Bomb.
Even my husband loves them. They are so moist, gooey, and yummy. Why have I not always made brownies like this?
Here's the secret to making them yummy WITHOUT gluten, dairy, OR sugar. I know... Sounds impossible, but it's really not. These are like I said... BOMB.
::: Ingredients :::
*4 oz dark chocolate {I bought mine in the bulk section at Winco}
*1 large sweet potato or 2 medium sweet potatoes {cooked and skinned}
*1/4 cup honey
*3 eggs {I used egg whites}
*1/4 cup cocoa powder {I bought mine in the bulk section at Winco}
*1 tablespoon of vanilla
*1 tablespoon almond flour
*1 tablespoon coconut oil
*1 teaspoon baking soda
::: Instructions :::
*In a food processor {or high speed blender}, blend the sweet potato until it's mushy.
*In a microwave or double broiler, melt the dark chocolate and coconut oil. I melted mine in the microwave, it took about a minute and a half, and I did 30 second intervals, while stirring in between.
*Combine all of the ingredients together and mix well.
*Grease a baking sheet with coconut oil, and pour the brownie mix evenly into a 8x11 baking pan. Bake at 325 degrees for 30 minutes.
*Enjoy!

I've heard of a chocolate beet cake but never sweet potato brownies. I can't wait to try out this recipe. Do you think wheat flour would work in place of the almond flour?
