homemade taco soup


Taco soup is my go-to meal when I'm too lazy to go grocery shopping, it's the end of the month, and our Dave Ramsey envelopes are feeling pretty thin. It's one of those meals where I use whatever cans are in my pantry, yet tastes uh-mazing every time... Like one of those meals where I went out earlier that day to buy fresh ingredients {love getting away with meals like this}! It's cheap, delicious, fast, and lasts a few days. Need I say more?

//Ingredients//
1-2 lbs ground turkey {beef or chicken}
1 medium diced white onion
1 tablespoon of coconut oil
1 can of corn
1 large can of crushed tomatoes
1 medium can of diced tomatoes
1 medium can of beans {I used white kidney beans, but sometimes I use black beans. It all depends on what I have in my cupboard}
1 package of taco seasoning {or make your own, I made my own}
chips/guacamole/cheese/sour cream {optional toppings}

//Directions//
In a large pot, cook your meat over medium heat with the taco seasoning until it's done. Add the coconut oil and diced onion. When the onion is lightly browned, add all of the canned ingredients. Cover and cook on medium/low until fully warm {it'll start bubbling}. I usually wait 45 minutes, just because Brad and I prefer it really warm. To speed up the process, cook it over medium/high heat, without a lid. Once it's done, serve with your favorite toppings {I love it with sliced avocados and chips}. It's the perfect meal for these fall nights.
