It's that time of year again. I'm beginning to get my end-of-the-summer-itch-for-fall. I'm in the mood to curl up on the couch, watch a scary movie, and eat a big bowl of popcorn.
I wanted to try something new this fall... Something a little healthier {I'm not calling this recipe healthy... But healthier than my caramel corn in the past}.
Here's what I came up with:
Ingredients
-6 to 8 cups of popped popcorn
-1/2 cup of honey
-1/4 cup of nut butter
-a large handful of marshmellows {optional} I like a little added gooey goodness
Melt the honey until it starts to boil. As soon as it boils, take it off of the stove top and add the almond butter. At the same time, heat your marshmellows in the microwave until they become gooey. Pour both the marshmellows and honey/nut butter mixture over the popped popcorn. Mix well. Enjoy!
