energy bites


All I have to say is thank the Lord for Pinterest, because most of my recipes are inspired from ones I find off of that site. I just do a little adapting to make them my own, and most importantly, to make them gluten-free. These little guys are the bomb diggity to say the least. They taste like no bake cookies, but healthier. Oh-my-goodness, they are SO good.

Energy Bites
{Recipe adapted from Gimme Some Oven}

Ingredients

1 cup of gluten-free oats
2/3 cups of coconut flakes
1/2 cup of nut butter {I used peanut butter, but I think I'll try cashew butter next time}
1/2 cup ground flaxseed
1/2 cup chocolate chips {not so healthy, but they are the best part!}
1/3 cup + 1 tablespoon agave syrup {If you use honey, you only need 1/3 cup}
1 teaspoon of vanilla

Instructions

Combine all of the ingredients in a bowl, and mix together. Let the dough cool in the fridge for an hour. After an hour, create small bite size energy balls. I used a spoon to create an equal amount, then I rolled them into balls. Place them inside an air tight container, and they should be kept in the fridge.

  6. I have been making these for a while and love them! My husband especially loves them... sometimes I don't even get many because he can't even contain himself and eats them all! haha
