Lately , I've been experimenting in the kitchen . I think because I want to surprise my husband when we reunite , and prove to him that I'm a good cook . I'd also like to trick him into thinking the food I'm cooking isn't healthy ... But it really is :] I'm going healthy now , guys .
These are pretty much amazing . And , they're honestly really healthy too . There's no dairy or gluten in these babies .
oatmeal pancakes
{serves 2}
ingredients
-1 cup gluten-free oats
-1 cup coconut milk/soy milk/or almond milk
-1/2 cup gluten-free flour blend {I use Pamelas}
-1/2 teaspoon baking soda
-1/2 teaspoon baking powder
-1 teaspoon vanilla
-2 tablespoons peanut butter
-1/4 cup dairy-free dark chocolate chips
-a few strawberries for a topping
instructions
1. Combine all of the ingredients {minus the strawberries} . Mix well .
2. Cook over medium heat in a pan .
3. Top with strawberries .
4. YUM .

That looks so delicious. I love strawberries...and they sound like an amazing combo with oatmeal + chocolate chip pancakes!

ReplyDeleteMolly! I made these this morning and they are seriously delicious! I didn't make them gluten/dairy free because that isn't a concern of mine but I did add some flax seed for extra fiber/omega 3s (I'm adding flax seed to everything these days) and topped them with left over raspberries I had from the farmer's market. So good!!! I can't wait to make them for my husband! Thanks for the recipe!
