gluten-free nutella oatmeal cookies


Who doesn't love nutella? Especially when it's mixed with oats, chocolate chips, and peanut butter.
These bad boys are so delicious AND dangerous.
Brad and I literally ate the entire batch this weekend... I'm not kidding. I may have given a few cookies away, but not that many. They are SO good... Especially when warm and paired with vanilla ice cream. YUM.


When I bake, I try to substitute ingredients in order to make the recipe a little healthier. For example, I substituted apple sauce for butter. Do you know of any healthy ingredient substitutions? I'd love some tips for future baking!

Gluten-Free Nutella Oatmeal Cookies

Ingredients
1/4 cup unsalted butter, softened/or 1/4 cup of apple sauce
1/2 cup sugar
1/2 cup brown sugar, not packed
2 eggs
1 1/4 tsp baking soda
1 tsp vanilla, gluten free
1/2 cup nutella
1/2 cup peanut butter
3 cups gluten free rolled oats
4 oz. chocolate chips

Instructions


  • Preheat oven to 350 degrees and spray a baking sheet with cooking spray.
  • In a large mixing bowl, combine sugar, brown sugar and butter/or apple sauce.  Add the butter and sugars together until mixed.  Add the eggs, baking soda, and vanilla.  Mix well until very creamy, about 1-2 minutes.  Add the nutella and peanut butter.  Finally, add the chocolate chips and gluten free oats.  Mix well.

  • 3. Place 1 ounce spoonfuls of the batter onto the prepared baking sheet approximately 2 inches apart as they will spread a bit.  Bake for 10-12 minutes until crispy around the edges and just browning slightly. 


     4. Remove from the oven and cool for a few minutes on the tray before transferring the cookies to a wire rack to cool completely.

    1. Molly these are killing me! I suffer from Gluten intolerance and I literally can't wait to try these :) Also if you substitute the eggs for egg white's they contain 70% less fat.
