three of my favorite foods:
1. peanut butter
2. bananas
3. chocolate [preferably milk chocolate]
i had a recipe for chocolate chip muffins, but i thought i'd spice it up a bit by adding peanut butter and bananas . you know i am not one who likes to follow a recipe , and so here i go again , creating my own recipes that seem sorta crazy , but i like a little crazy in my life .
{ here's what i came up with }
{ gluten-free peanut butter banana choco-chip muffins }
[makes about 16 mini muffins]
this recipe comes from the cookbook "gluten-free quick and easy" by carol fenster, ph.d [minus the peanut butter and bananas] you can purchase her amazing cookbook
here . it's been one of my go-to's since i was diagnosed with celiac .
ingredients
3 cups carol's muffin and quick bread mix
1/2 cup unsweetened cocoa powder [not dutch or alkali]
2 large eggs, at room temperature
1 cup 1% milk
1/3 cup canola oil
1 teaspoon [i added 2 teaspoons] vanilla extract
1/4 cup [i added 1/2 cup] chocolate chips
2 large unripe bananas
creamy peanut butter for frosting
directions
1. preheat oven to 375 degrees F. grease muffin pan .
2. combine the bread mix and cocoa powder in a large bowl. add the eggs, milk, oil, and vanilla and beat with an electric mixer on medium speed just until the mixture thickens slightly .
3. stir in chocolate chips and bananas .
4. spoon the batter into the prepared muffin pan, dividing evenly . rap the pan on the countertop to settle the batter into the pan .
5. bake for 12 minutes .
6. let cool for 10 minutes .
7. frost the muffins with peanut butter .
8. eat warm .
