I am, and always will be, a sucker for pumpkin. I know it's not technically fall yet, but I couldn't help myself when I went to the grocery store last night and saw big cans of pumpkin on display.
I saw the idea of a pumpkin oatmeal via pinterest, but I tweaked the recipe slightly, due to the fact that I didn't have all of the same ingredients. It turned out heavenly, and now I crave pumpkin flavored anything more than I did before. It's a good thing I stocked up and bought two huge cans of pumpkin [hey, you never know when there's going to be a shortage of pumpkin, I want to be fully prepared if it does]!
-1 cup of gluten-free oats
-1/2 cup pumpkin purée
-1 t of cinnamon
-4 egg whites
-honey to taste
 Cook oats on the stovetop until they are almost done.
 Quickly stir in the egg whites, then add in the pumpkin purée and cinnamon. Stir until it's well mixed, then wait until the the oats are completely finished.
 When the oats of done cooking, divide the oats into four separate bowls, and top with walnuts & honey.
