brad and i live in a one bedroom apartment, a block from the oregon state campus. we love where we live. we are looking forward to one day settling into a cozy home, but for now, we have to make our white walled apartment feel like a warm and welcoming home.

i love being creative. i love having an apartment where i can decorate and give it a unique touch. i'm hoping to next summer have my own saturday market booth in corvallis, where i can sell unique goods to fill your nest with. i have lots of ideas, but i'm not exactly sure what will be sold in my booth {much trial and error} some of my ideas are in my apartment.

gluten-free nirvana bars.

thank you glutenfreegoddess.blogspot for introducing me to some of the most amazingly delicious gluten-free recipes.

my favorite treat from her blog is the gluten-free nirvana bars. they are to die for. i am a huge fan of anything coconut and chocolate. so delicious.

1/2 cup butter or vegan margarine, such as Smart Balance
1 1/2 cups gluten-free chocolate cookies, processed into crumbs
1 cup (heaping) semi-sweet chocolate chips
1 cup sweetened flaked coconut
1 cup chopped roasted almonds (I used salted because I like a sweet and salt combo)
1 14-oz. can sweetened condensed milk

Preheat the oven to 350 degrees F.

Place the butter in a 9x13-inch baking pan and set it in the oven until the butter is melted. Tilt the pan to coat the bottom evenly.

Sprinkle the cookie crumbs in the buttered pan and toss them to coat; press them into a layer. Pour the condensed milk in the pan. Add a layer of chocolate chips, then a layer of coconut, then almonds. Using the back of a spatula, press the mixture firmly into the pan.

Bake at 350 degrees F for about 20 to 25 minutes, until set.

Cool completely on a wire rack. Chill before cutting.

Makes 15 to 20 bars.

first camping trip as mr &&& mrs.


nothing beats the sunshine, time with my hubby, and good old mother nature.
brad and i went camping down on the umpqua river for a few days. baseball season is over and i'm done with summer school, so we were finally able to get away and spend some quality time together. when we got married, we registered for a lot of camping equipment, so we were anxious to finally use it. the weather was absolutely perfect, stayed in the 80's the whole week.
{things to remember for my next camping trip}
1. bring dish soap.
2. sticks in the water are not always water snakes.
3. wear sunscreen.
4. wear bug repellent before stepping out of the car when we arrive.
5. remember a table cloth.

there's something about being in nature that makes time non-existent. we were able to put away our phones, and not look at the time for a few days. it was rather refreshing.it's good to get away for a few days and realize what's really important.

i'm sure that'll be the first of many camping trips as mr &&& mrs kidd.
